These little green legends are one of the most versatile legumes you can keep in your pantry. Mung beans cook quickly, sprout easily and are packed with plant-based protein — a staple across Asian cuisines for very good reason.

- Sprout them in just 2–3 days for fresh, crunchy bean sprouts at home
How to use: No soaking needed (though it speeds things up). Simmer for 25–30 mins until tender for dhal, soups and curries, or sprout them on the bench for stir-fries and salads. They're also the bean behind glass noodles and sweet bean paste!
