Ingredients

1 cup organic yellow split peas

1 large onion, chopped

2 cloves garlic, minced

1 large carrot, diced

1 stalk celery, diced

1 teaspoon ground turmeric

1 teaspoon cumin

6 cups vegetable broth

2 tablespoons olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Method

1. Prepare the peas: rinse the split peas under cold water until it runs clear.

2. Cook the aromatics: heat olive oil in a large pot over medium heat, then cook the onion until translucent.

3. Add veg: stir in the garlic, carrot and celery and soften for about 5 minutes.

4. Spice it up: sprinkle in the turmeric and cumin and let them sizzle for a minute. (Buying spices in bulk is cheaper than the supermarket — and you take just what you need, no waste.)

5. Simmer: pour in the split peas and broth. Bring to a boil, then lower the heat and simmer, covered, for 25–30 minutes until the peas are soft.
